Por, por meio de, por causa de, através de, mediante, and some others I’m probably not aware of. How do they all work and to what extant are they interchangeable?

Por causa de means because, so it’s distinct from all the other prepositions/prepositional phrases you listed. Por is the most versatile one - it’s discussed in some detail in the following Learning Note, especially in contrast with para: The Difference Between Por and Para – Practice Portuguese
Por is somewhat interchangeable with por meio de, através de when used in the sense of through or similar. Por meio de and através de are wordier and may feel more formal (especially por meio de).
- É possível chegar à aldeia pela autoestrada. = É possível chegar à aldeia por meio da autoestrada. = É possível chegar à aldeia através da autoestrada. (It’s possible to reach the village through/via the highway)
- Eu descobri isto pela Internet. = Eu descobri isto por meio da Internet. = Eu descobri isto através da Internet. (I discovered this through the Internet)
In contexts where we specifically mean going across something, only por and através de should be used.
- Ele correu pelo terminal do aeroporto. = Ele correu através do terminal do aeroporto. (He ran across the airport terminal)
- A luz passou pela janela. = A luz passou através da janela. (The light passed through the window)
As for mediante, it can be used similarly to the other ones in the sense of through, but in many contexts, it also has a conditional sense that sets it apart. It’s generally perceived as formal. The first example below demonstrates a general use, while the second shows the conditional use.
- Os atletas serão apoiados mediante o reembolso das suas despesas. = Os atletas serão apoiados através do reembolso das suas despesas. = Os atletas serão apoiados por meio do reembolso das suas despesas. (The athletes will be supported through the reimbursement of their expenses)
- O serviço é prestado mediante pagamento. (The service is provided upon/in exchange of payment)
