When I was a young boy, my grandmother used to get fresh marmelos and make marmalada on her basement stove (yes, she had two gas stoves - one for the big jobs in the basement of her house!) every autumn. The smells were intoxicating, and after putting the finished marmalada in jars, she would seal the tops with melted wax and dole them out to the family. We’d have treats that served us well until the following September or October!
